ABC Family 13 Nights of Halloween Is Back

The other day was my hubbies 35th birthday, and I had been promising to pull out my old Banana Cream Pie Cupcakes recipe, so I thought what better time than his b-day! Today I’m going to share this delicious and rich dessert with you!
Banana Cream Pie Cupcakes A delicious cupcake that takes just like your eating a banana cream pie!
1 Box Yellow Cake Mix ( I use Immaculate because its the closest to homemade) + ing on the back
1 Box Vanilla Pudding Mix
1 Box Nilla Waffers
1 Box Instant Banana Pudding Mix
1 1/2 c Cold Milk
1 Banana
Frosting
1 c Soft Butter
1 c Vegetable Shortening
2 lbs Confectioners Sugar
8 oz Whipped Cream
3 tbs Heavy Cream
2 tsp Vanilla Extract
2 tsp Banana Extract
Preheat oven to 350*. Line 2 muffin tins with 24 paper liners and spray with baking spray.
In large bowl prepare the cake mix according to the instructions. Stir in the box of vanilla pudding mix without the milk..mix until blended.
Place a single cookie in the bottom of each paper liner then pour batter into each filling each 2/3 full and bake for 20-25 min depending on your oven (check with toothpick at 18min)
Cool completely
Once cupcakes have cooled completely, core them using a sharp knife as to not mangle the cupcake. Be careful as to not cut completely through the bottom of the cupcake, the cookie should help with this.
Prepare your filling. In a medium bowl combine milk, banana cream pudding & sliced banana and stir to combine..you want your banana sliced then quartered so they are small bits. fill the cupcakes with the pudding.
Make your frosting. mix together butter, shortening, whipped cream, heavy cream, vanilla, & banana until blended. Next add in your confectioners sugar, and mix until smooth. Place in piping bag and pip generously over the top of the cupcake and pudding filling.
Keep refrigerated if not eating that day.
You can make this without the pudding filling and it still tastes like a banana cream pie, but its not as messy and easier for children to handle.

Something that everyone needs is a good pair of shoes, or kicks as my boys say. For as long as I can remember I tend to buy the same brand over and over, Skechers. They have come out with so many innovative styles over the years…and colors that will please anyone. I was recently able to work with Skechers to try out their line of Women’s Equalizers! Skechers Equalizer are a Skech-Knit Mesh one piece upper in a lace up sporty athletic training sneaker with Gel Infused Memory Foam insoles. It’s like a cloud for your feet! I have worn them for a while now, and I love the Skech-Knit Mesh, it really allows your feet to breath in this south Texas heat, whether I’m running errands, or just running. As I mentioned earlier, they have an array of colors with this shoe as well, I choose the Oasis, which I love, but is not like me at all, I usually choose a pink…they have a pink/navy & pink/black, but for some reason the blue/purple called my name! While they have kept me great company this summer, I think they would make a great Back to School shoe as well, there is a color for every outfit, and it will keep you or your grown kiddos going all day at school..I remember how much walking I did around campus my freshman year..it was killer on my feet, I would have loved to have these Skechers back then (lets just say it was a few years ago). In the spirit of tax season, I would like to share new, interesting results with you from a recent GameStop survey. GameStop recently surveyed over 1K tax refund recipients, ages 18-44, to find out how they really spend their tax refund, how they wish they could spend it, what they would do to get more money and more.
Here are some top stats:
Willing to Sacrifice: 30 percent of respondents would be willing to give up chocolate and candy for a whole year if they could receive double their refund. 20 percent would be willing to give up their car and 15.6 percent would be willing to visit their in-laws every weekend.
Sense of Humor: Grumpy Cat and Pac-Man were tied at 20 percent each for how respondents would characterize the IRS!
Travelers: Looks like Americans love to travel because 44 percent of respondents would rather receive their refund in the form of a flight; the second runner-up for first choice was video games (16.5 percent).
Honest: Only 7 percent of respondents have ever lied about what they spent their refund on
Charitable: Almost half – 54 percent – of respondents would be willing to donate part of their refund to a charity of their choice
The survey was conducted between Feb. 11 and 16, 2015, via Survata.com.
