With the weather around here looking and feeling like fall, it has me craving fall foods like soup. Soup is one of my favorite go-to foods. It’s filling, healthy and it’s usually really easy to pull together any day of the week. This Smoked Sausage, Spinach & White Bean soup is filled with staple ingredients that I almost always have in my pantry and fridge. Beans and basic veggies like carrots, celery & onions are really essential ingredients to just about all of our soups so I try to keep them on hand.
Ingredients:
14 oz. smoked sausage
8 cups vegetable broth
3 cloves of garlic, minced
½ medium onion, diced
4 tbsp olive oil, divided
1 can cannellini beans, undrained
2 cups rotini pasta
2 cups spinach, roughly chopped
¼ tsp salt
½ tsp pepper
1 tsp oregano
1 tsp thyme
Directions:
In a skillet, heat 2 tbsp olive oil over medium heat. Chop smoked sausage into ½-1 inch slices. Cook over medium heat, 6-7 minutes, stirring frequently, until cooked through and beginning to crisp on all sides. Set aside. In a large soup pot, heat remaining 2 tbsp olive oil over medium heat. Add chopped onions and minced garlic and cook for 2-3 minutes, until onion is turning translucent. Pour in vegetable broth, and add cannellini beans. Bring to a boil. Add in pasta, sausage, and seasonings. Boil for 5-7 minutes, until pasta is just al dente. Add spinach and cook 1-2 minutes more. Serve hot.

ROBIN ROBERTS
Robin Roberts is co-anchor of ABC’s “Good Morning America.” Under her leadership, the broadcast has won four Emmy Awards forOutstanding Morning Program. She has conducted interviews with countless newsmakers, musicians, authors, athletes and celebrities and has done extensive reporting around the globe. In 2014, Roberts was honored with the Walter Cronkite Award for Excellence in Journalism, was inducted into the Broadcasting & Cable Hall of Fame, and named one of Glamour’s Women of the Year. She was voted the “Most Trusted Person on Television” by a Reader’s Digest poll in 2013.
Roberts was diagnosed with breast cancer in June 2007. Five years later she was diagnosed with MDS or myelodysplastic syndrome, a disease of the blood and bone marrow once known as pre-leukemia. Roberts underwent a bone marrow transplant in September of that year. She was honored with a George Foster Peabody Award, Gracie Award and CINE Award for “Robin’s Journey,” reports on her MDS that inspired hundreds of potential bone marrow donors to register. Additionally, Roberts was recognized with the Arthur Ashe Courage Award at the ESPY’s in July 2013.
Roberts’ first book, From the Heart: 7 Rules to Live By, was published in 2007. In her latest memoir Everybody’s Got Something, Roberts tells the amazing story of her courageous battle against a life-threatening illness, the life lessons she continues to learn, and her inspiring return to the GMA anchor desk.

With 4 kiddos you can bet I’ve been through my fair share of colds. It doesn’t matter what time of year, but the spring seems to always be the worst time. As a mom, you’ll do absolutely anything to make sure your little ones are healthy and happy – There are many steps we try to teach them to avoid getting sick, like hand washing and not eating or drinking after someone who is sick. Lots of Patience – Let’s face it, they are miserable and may have some strange requests and want your full attention. Be patient, a cold doesn’t last forever, but giving them the love and attention they need makes all the difference.
